Carrot Pancakes With Spicy Prawns

A tangy recipe by Hello Chef with prawns and veggies

Serves 2 

 

Ingredients for spicy prawns

  • prawns 350g
  • 2 garlic cloves
  • chipotle powder 3g
  • salt ¾ teaspoon
  • black pepper ½ teaspoon
  • olive oil 1 tablespoon

 

Ingredients for pancakes

  • carrots 3 
  • garlic cloves 2
  • eggs 2
  • olive oil 1.50 tablespoons
  • salt 0.75 teaspoon

 

Ingredients to serve:

  • broccolini 200g
  • red chilli large 1 piece
  • fresh coriander 15g
  • 1 lime
  • greek yogurt 80g

 

Method:

  1. Preheat the oven to 200°C. Peel and grate carrots. Peel and mince garlic. Combine grated carrots and minced garlic in a bowl. Add eggs and olive oil. At the last minute, add salt. Stir well. 
  2. Scoop pancakes on an oven tin lined with baking paper, draining off any excess liquid. Bake in the oven for 15 minutes.
  3. Pat dry prawns. Peel and crush the garlic. Mix with prawns in a bowl. Add chipotle (adjusting the amount to your liking), salt, black pepper and oil. Set aside.
  4. Rinse broccolinis and trim the stems a little if needed. Bring a pot of lightly salted water to a boil. Boil for 3-4 minutes until tender.
  5. Heat a pan over medium-high heat. Fry the prawns for about 1.5-2 minutes per side until cooked through but still juicy (do not overcook).
  6. Cut red chilli to thin rings. Rinse and chop coriander. Cut limes to wedges. Top each carrot pancake with a bit of Greek yogurt. Divide the prawns on top. Finish with red chilli, coriander, and a side of cooked broccolini. Squeeze some lime juice on top just before eating.
