Try This French Apple Chicken Recipe

Serves 2



  • chicken breast 400g
  • shallots 1 piece
  • green apple 1 piece
  • olive oil 1 tablespoon
  • water 150ml 
  • cooking cream 100ml 
  • dried thyme 2g
  • salt ¾ teaspoon
  • black pepper ½ teaspoon


Roasted vegetables:

  • parsnip 1 piece
  • carrot 2 pieces
  • red onion 1 piece
  • olive oil 2 tablespoons
  • Dijon mustard 6g
  • salt ½ teaspoon
  • black pepper ¼ teaspoon



  1. Preheat the oven to 220°C/200°C fan. Peel and chop the parsnips and carrots roughly. Peel and slice the red onion into wedges. Peel and finely chop the shallots. Grate the apple.
  2. Add the parsnip, carrot, red onion, olive oil, mustard and half of the thyme to a bowl and give everything a good mix. Add it all to a lined baking tray and roast in the oven for 30 minutes. Season with salt and pepper.
  3. Meanwhile, heat a pan over medium heat with a drizzle of oil. Add the chicken and cook for 2 minutes per side. Reduce the heat to low and add shallots and apple. Fry for 2 minutes further.
  4. Add the measured water, cooking cream and the remaining thyme. Simmer, uncovered, for 10-15 minutes until the sauce has thickened and the chicken is cooked through. Season with salt and pepper to taste. Serve the roasted root vegetables as a side.
