Healthy Huevos Rancheros Recipe

Try Hello Chef's take on this Mexican breakfast

Serves 2

 

Main dish:

  • brown onion ½ piece
  • garlic cloves 2 pieces
  • olive oil 1 tablespoon
  • chopped tomatoes 400g
  • salt ¾ teaspoon
  • chilli flakes 2g
  • black pepper ¾ teaspoon
  • eggs 6 pieces
  • mature cheddar cheese 60g

 

To serve:

  • fresh coriander 20g
  • avocado 2 pieces

 

Method:

  1. Peel and mince the onion and garlic. Heat a non-stick pan over medium-low heat with a drizzle of oil. Once hot, add the onion and cook for 5-6 minutes or until softened. Add garlic and cook for 1-2 minutes further.
  2. Add in the chopped tomatoes, salt, chilli flakes and black pepper. Let it simmer, uncovered, for 5 minutes. Using the back of a large spoon, form grooves in the sauce and break an egg into each. Cube the cheddar cheese and add it to the pan.
  3. Cover the pan with a lid and cook over medium-low heat for 5-10 minutes or until the eggs are cooked to your liking (the egg whites should be set but the yolks should stay runny) and the cheese has melted.
  4. Chop the fresh coriander and sprinkle it on top. Serve with sliced avocado.
