A Sesame Tuna And Veggie Recipe

Serves 2

 

Ingredients for tuna

  • tuna steaks 400g
  • salt 1 teaspoon
  • black pepper ½ teaspoon
  • sesame seeds 10g
  • olive oil 1 tablespoon

 

Ingredients for roast

  • red bell pepper 1 piece
  • yellow bell pepper 1 piece
  • carrot 1 piece
  • olive oil ½ tablespoon
  • salt 1 tablespoon
  • shelled edamame 100g
  • fresh coriander 20g
  • green chilli large 1 piece

 

Ingredients for dressing

  • sesame oil 10ml
  • rice vinegar 15ml 
  • soy sauce 20ml
  • honey 10g
  • lime 1 piece
  • chilli flakes 2g
  • spring onion 50g

 

Method:

  1. Preheat the oven to 220°C/200°C fan. Cut the peppers into chunks. Peel the carrot and slice it. Add peppers and carrot to a lined baking tray, drizzle with oil, and roast for 25 minutes until browned.
  2. Pat the tuna steaks dry with kitchen paper. Season with salt and pepper. Cover the steaks in sesame seeds, pressing them firmly into the surface. Set aside.
  3. Combine all of the dressing ingredients in a small bowl. Adjust the amount of chilli flakes and lime juice to your liking. Thinly slice the spring onions and mix them into the dressing.
  4. Season the roasted vegetables with salt. Mix with the drained edamame beans, chopped coriander and sliced green chilli. Keep warm.
  5. Heat a non-stick pan over a medium heat with a little oil. Once hot, add the sesame tuna steaks and cook for 1-2 minutes on each side until cooked to your liking. Set aside to rest, then slice. 
  6. Divide the warm roasted vegetables among plates. Arrange the sliced tuna on top. Drizzle with dressing.
