How To Make Sirloin Steak

Follow Hello Chef's yummy recipe with anchovy butter

Serves 2

 

Ingredients for the steaks

  • beef striploin steaks 350g
  • olive oil 1 tablespoon
  • salt ½ teaspoon
  • black pepper ½ teaspoon

 

Ingredients for anchovy butter

  • anchovies 10g
  • garlic cloves 2 pieces
  • fresh parsley 15g
  • olive oil 2 tablespoons
  • salted butter 20g

 

Ingredients for greens

  • green beans 300g
  • zucchini small 3 pieces
  • lemon 1 piece
  • olive oil 2 tablespoons
  • salt ½ teaspoon

 

Method:

  1. Remove the steaks from the fridge 20-30 minutes prior to cooking. Trim the green beans. Chop the zucchini into french fries. Slice the lemon into wedges. Add the anchovies to a plate and mash them using a fork. Peel and crush the garlic. Chop the fresh parsley.
  2. Pat the steaks dry with kitchen paper. Heat a large pan over high heat with a drizzle of olive oil. Once hot, add the steaks. Fry for 2-4 minutes on each side or until cooked to your liking. Transfer the steaks to a plate and leave them to rest for 5-10 minutes. Once rested, season with salt and black pepper.
  3. Cook green beans in a pot of salted boiling water for 3-4 minutes or until tender. Drain once cooked.
  4. To make anchovy butter, combine the mashed anchovies, crushed garlic, chopped parsley, olive oil and salted butter in a pan with a lid. Heat over very low heat and stir for 3-5 minutes until the anchovies melt. Take off the stove and keep covered with a lid until serving.
  5. Meanwhile, wash and dry the pan, and return it to medium-high heat. Add a drizzle of olive oil. Add the drained green beans and zucchini sticks. Fry with a pinch of salt for 2 minutes. Season with a squeeze of lemon juice.
  6. Divide the rested steaks and the pan-fried vegetables among plates. Drizzle the steaks with the anchovy butter. Garnish with the remaining lemon wedges and serve immediately.
